Sailor Seeks Horse is a small vineyard in Tasmania's Huon Valley. Winemakers and viticulturists Gilli & Paul Lipscombe set out to rehabilitate an old vineyard in 2010, planting new clones, with spectacular results for both Chardonnay and Pinot Noir.
Whole bunch pressed, wild ferment, 20% new oak, on lees for 12 months in barrel, then 3 months in tank before bottling. No fining. 13.1%
Michele's notes: Exotic flowers with celery, cashew and lemon curd. The fruit is beautifully framed by subtle, classy oak. Silky texture in the mouth with melon and barley sugar but also the complementary tang and astringency of grapefruit. This fascinating Chardonnay continued to drink superbly, and develop subtle complexities, over several evenings, indicating a great cellar life.
